Papa's Irish Soda Bread with Kelp

Soda Bread with Kelp4 c Flour
1 tsp Baking Powder
1 tsp Baking Soda
1 tsp Salt
1/4 c Sugar
1 pinch Cream of Tartar
1 3/4 c Buttermilk
1 c Raisins
1 tbsp Caraway Seeds
1 tbsp Sugar Kelp
1/3 c Butter
Cinnamon and Sugar Mixture (optional)

Sift first ingredients. Cut butter into dry ingredients until mix is crumbly. Slowly mix in buttermilk. Add raisins. Add caraway seeds and sugar kelp.

Knead on a floured pastry board (not a lot, just to get it into a ball and all together from the edge of the bowl). Roll into a ball; shape by pressing down and keeping edge round.

Grease a cookie sheet. Cut an X into the bread with a sharp knife (start about an inch in; go about an inch or so down). Pour melted butter (about 1 tbsp) into the X. If desired, pour premixed cinnamon and sugar over the X and lightly over the top.

Bake at 350 degrees for 1 hour (check after 50 minutes). Check center with a toothpick - toothpick should be dry. After 5 minutes, transfer to a wire rack to cool. If you cut it before it cools, you will have a mess!
