Shrimp Scampi with Sea Lettuce

Shrimp Scampi with Sea Lettuce1 1/2 lbs Large Shrimp (about 14-16)
1/4 c Dry White Wine
1/3 c Clarified Butter
2 tbsp Lemon Juice, fresh if possible
4 tbsp Garlic, minced
2 tbsp Sea Lettuce Flakes
2 tbsp Fresh Parsley, chopped
4 Green Onions, thinly sliced
Salt and Pepper to taste

Rinse shrimp and set aside.

Heat butter in a large skillet over medium heat. Cook garlic 1-2 minutes or until softened but not browned. Add shrimp, green onions, sea lettuce, wine and lemon juice. Cook until shrimp are pink and firm, about 1-2 minutes on each side. Do not overcook.

Add parsley, salt and pepper before serving. Garnish with lemon slices and parsley sprig if desired.
